From the estate's youngest Pouilly-Fuissé vines that average 30 years old, grapes are rigorously sorted after hand-harvesting and all applications in the cellar are carefully excuted; from a very slow pneumatic pressing with very low pressure, low temperatures for slow wine-making, oxygenation of musts in fermentation and aging on the fine lees for 6 months. New barrels are only used for 3 months and only for 50% of the wine.
