They use the concrete eggs for a bit of the fermentation here, 12% Semillon, 3% Sauvignon Vert , partially barrel fermented with a nice amount of ripe melon and fig like fruit on the nose, a gravelly like minerality and a hint of a musky quality. Unfiltered unfined, this wine has a rich texture on the tongue with a solid core of ripe melon and candied grape fruit citrus on the tongue leaves the tongue salivating for food, lots of minerality on the finish. finish 45+ Excellent +
