This wine is crafted using traditional, low-intervention methods. The process begins with de-stemmed grapes and a 3 to 5-day cold soak to extract deep color and aroma. Fermentation is 100% natural, lasting 18 to 21 days in enameled and stainless steel tanks with twice-daily punch-downs to build structure. The wine ages for 16 to 18 months, keeping new oak to a maximum of 30% so the fruit remains the focus. Finally, it is bottled directly at the domaine without fining or filtering to preserve its authentic character.
