The estate's current style remains true to the natural character and classicism of Hubert's wines, some vintages of which required considerable patience, but with a greater openness in the bouquet and more silkiness and creaminess in the textures. We pay particular attention to whole-cluster fermentation, the proportion of which is constantly adjusted according to the terroir, the age and characteristics of the vines, and of course, the vintage. Alcoholic fermentation takes place primarily in large wooden vats, and aging occurs in 228L barrels



The name "Les Grèves" refers to the gravelly soils and can be considered a derivative of "graves," a type of crumbly rock, fine scree associated with clay. This vineyard, covering approximately 20 hectares and located in the heart of the hillside, is considered the finest Premier Cru of Beaune. The best part of the plot lies within the heart of the appellation. Our parcel is situated to the south of the "Vigne de l'Enfant Jésus" vineyard belonging to Maison Bouchard Père & Fils.
