There are 20 Million acres of wine grapes planted around the world. All of the growers strive to nurture their vines so the grapes will reach maturity and a concentration of varietal character. There is s little patch in Calistoga that the Frediani family purchased at the turn of the century that is unique in a world with 20 million other players.



Many decades ago the Frediani’s made the decision to plant Petite Sirah, known as one of the most intense flavored wine grapes, in their little piece of heaven. It just happens to have incredibly rich volcanic soil to provide every possible nutrient necessary for Petite Sirah to thrive. The Calistoga AVA also is famous for having the largest change in temperature from day to night in Napa Valley. The cool mornings and evenings slow the maturation process and let the grapes reach maximum physical maturity and balance.



The resulting wine is a beast. It is inky black with so much concentrated fruit that your palate is saturated with blackberry-leathery goodness. What do you do with the beast? Let’s discuss basic food pairing. In general, the lighter the wine the lighter the food. The more intense the wine the more bold the food can be. A black pepper crusted, grilled steak would obliterate the flavors of weaker wines. The Frediani Petite Sirah will take on all comers with it’s over-the-top intensity. The other option which is a regular occurrence at our place. This is the last wine of the evening. Yes,  it’s the finish line. Go through your progression throughout your event. Just end here with a big, bold mouthful of Calistoga sunshine in a bottle… and some stinky cheese… or bacon chocolate.
