Winery Notes
Sweet wine produced from Malvasia (90%) and Trebbiano (10%) grapes, hand-picked when perfectly ripe and naturally dried for about 120 days in a well-ventilated room. After pressing, the must is transferred into small oak and chestnut barrels with a capacity ranging from 40 to 180 litres , sealed and placed under the roof, in an environment subject to seasonal temperature variations. Here it ferments and slowly ages for 6 years , with evaporation of 40% of the initial content, with a final yield of vinsanto of 10-12% of the initial weight of the grapes. Before bottling, it is filtered drop by drop in Dutch cloth strainers. It is a wine suitable for very long aging , to be tasted at cellar temperature (10ºC). This wine does not contain added sulphur. Aged 18 months in bottle in our cellars .
