Château Clos de Sarpe has always produced genuine Saint-Emilion wine, natural, straightforward, sincere, concentrated, tannic, complete and solid - an expression of the unerring truth of the land and the flexible truth of time. In the cellars, long and fiercely natural vinification results in pure authenticity. The chateau creates two wines: Chateau Clos de Sarpe and Charles de Sarpe, the estate’s second wine. The late harvest is done by hand. The estate's two grape varieties are collected on diffferent days depending on grape ripeness and the age of the vines.
Harvest: Late harvest, completely hand-picked. A few days before the harvest, an artisan and very rigorous pre-sort is carried out at the vines. This ensures that the grapes are healthy and fully ripe. All work on the vines is oriented around a very modest yield. This late, hand-picked and tray-loaded harvest provides the ripest and richest grapes that require no “assistance” during the wine-making process.
Type of vats: concrete and stainless steel
Vinification long and meticulous, oriented towards concentrated wines that are full, structured and capable of ageing because of the tannins.
Ageing: New French oak barrels
Bottling: without fining or filtration. No chemical additives are used in the cellar or on the vines.
