Located between the Côte de Nuits and the Côte de Beaune, the Pernand-Vergelesses vineyard is nestled in the greenery of a peaceful valley and originates at the foot of the Corton hill.
The name of the climate "Bois Noël et Belles Filles" alludes, for poets, to a place called "Bois Noël et Belles Filles" (Bois Noël et Belles Filles) alludes, for poets, to a place where girls go with pleasure to romantic rendezvous.
The only one to present the entire range of wines, both white and red, it knows how to warmly welcome the tourist as well as the informed amateur who will take great pleasure in walking around and soaking up the sweetness of this place.
Red vinification: We are looking for fruity and rich wines with melted tannins as well as very ripe grapes know how to give. We bring the grapes in small boxes, in order to carry out a meticulous sorting in the winery, a belt allows us to fill the vats while respecting the grapes. Fermentation takes place for 15 days with punching down so that the richness and colour of the skin are transmitted to the wine before pressing. Ageing takes place in barrels, 20% of which are new. Racking with a bellows eliminates the use of the pump. All these precautions make it possible to limit the handling of the grapes and wine as much as possible in order to preserve all its riches.
Pernand-Vergelesses: Well exposed to the east, this climate is located opposite the village of Pernand.
The slope is marked and erosion is contained by limestone banks. The soils take on a red colour thanks to the ferruginous clays found there.
This is where the supple and fruity red wines of the Côte de Beaune are born.
Their aromas are fresh (blackcurrant and redcurrant), round and fruity with a touch of minerality, typical of our hillsides. Pernand can be served from 3 years old. Service close to 15°C. It goes well with beef fillet, sautéed veal, lacquered lamb shoulder, rooster-style duck fricassee or a beautiful cheese platter.
