Giacomo Grimaldi's 2019 Barolo DOCG "Sotto Castello di Novello" is a red wine of great elegance and complexity, produced in the prestigious Barolo region of Piedmont. This wine is made from 100% Nebbiolo grapes, grown in vineyards located in the municipality of Novello, characterized by calcareous-clayey soil that gives the wine a solid structure and remarkable longevity.

It displays an intense garnet red color, typical of quality Barolos. On the nose, it offers a complex and refined bouquet, with notes of ripe red fruits, such as cherry and raspberry, accompanied by floral scents of rose and violet. With aging, nuances of sweet spice, tobacco, and leather also emerge.

On the palate, Barolo "Sotto Castello di Novello" stands out for its well-defined tannic structure and balanced acidity, guaranteeing considerable aging potential. The finish is long and persistent, with an aftertaste that recalls the fruity and spicy notes perceived on the nose. This wine pairs perfectly with red meat dishes, game, and aged cheeses, enhancing the flavors with its complexity and depth.
