Vinification
Destemming and soft-pressing; followed by fermentation in temerpature-controlled
small stainless steel tanks. The wine is left to rest on its noble lees for almost 8
months. The wine is then filtered and bottled. It is bottle-aged 3 months before release
Tasting Notes
Color: straw yellow
Bouquet: notes of cedar and acaia flowers, enriched by slight notes of petroleum
Taste: a taste reveals inviting acidity, supported by extraordinary structure. Hints of
grapefruit and white flowers are in perfect harmony with marked acidity. It has a long
and clean finish
