Gewurztraminer Vendanges Tardives are only produced in the great years. To produce it, you need a minimum of 16 ° potential for the harvest. The grapes are harvested by hand and pressed in pneumatic presses. The juice flows directly by gravity to the cellar where it is decanted before fermentation begins. This will last about three weeks and more. Fermentation stops naturally to keep this residual sugar which will balance this late harvest. Bottling is done in the spring following the harvest, the wine then matures in the bottle for a few years before being put on sale. It will be delicious as an aperitif such as with foie gras, rich sauces, veal, poultry in cream and mushrooms. It can also be fully appreciated on spicy cuisines such as Chinese cuisine, on a roasted duck, for example, or hard cheeses, and, of course, fresh and fruity desserts.
