Drinking wine is my life and although we get a little too busy to keep our focus on this task during the month of December, we have a great line-up of events to start off the month this year.

We have been following the handy work of Russell Beven for decades now and it seems that his followers are very loyal as we had reservations for this event even before we had a list of wines or a menu posted on-line.

Adversity Cellars is Russell’s latest venture as an owner and winemaker.  These are top level wines from one of the best minds in the business and we never miss an opportunity to break bread with a winemaker like Russell Bevan.

A bit about Adversity Cellars:

 

Adversity Cellars is a project from Russell and Heidi Bevan that is designed to showcase sites that have unique flavor and textural profiles from vineyards whose location forces the vines to struggle for their existence; forcing them to deal with great Adversity.

Russell Bevan's passion for wine dates back to his days in highschool. Everything he has done in life up to this point in time has pushed him to become the winemaker he is today.  To date, he has crafted double digit hundred point wines but is excited to embrace the challenge of crafting wines from these dynamic sites that force the vines to deal with so much Adversity.

Heidi spent the last 8 years flying and running an aviation company, enjoying the challenges this type of career presented to her.  Since meeting Russell and getting married, Heidi has moved in to the wine world helping with tastings and working at the winery side by side crafting the wines with her husband Russell.

The 2020 Adversity Chardonnay is completely different from any Chardonnay I have crafted before. Where the vineyard is located, we knew it would have the classic crisp flavors that we enjoy in white Burgundy, but with the hang time to capture some of the beautiful textures California is so famous for. We intentionally made the wine to be a little reductive hoping to achieve the intensity found in Meursault and the flamboyancy of the best Sonoma Coast Chardonnays. This is complexity and harmony at its most perfect balance, making it one of those rare Chardonnays that captures both finesse and power.

The 2021 Chardonnay has an amazing aromatic blast of citrus, specifically kaffir lime and Meyer lemon, with a hint of pineapple. The acidity is refreshing and crisp, never becoming heavy or oily. Despite the mid-palette richness, the wine remains light on its feet. The finish is incredibly long, lasting 30 seconds due to the high acidity in the 2021 vintage. The weight and glycerin on the back of the palate contribute to its fabulous taste.

(95+ Points) The inky hued 2019 Cabernet Sauvignon Erba Vineyard, which includes 15% Petit Verdot, comes all from Atlas Peak (next to Pahlmeyer) and was brought up in new barrels. It's loaded with bloody, iron-laced blue fruits as well as notes of sage brush, bouquet garni, chocolate, and crushed stone. Full-bodied, seamless and beautifully pure, with a big finish, it's going to benefit from short-term bottle age and keep for 20 years.

The Sage Ridge 2021 Cabernet Sauvignon is pure, intense magic. The wine embodies the essence of its mountainous origin, from the initial aroma of red and blue fruits to the lingering finish. This wine begs to be aged for five years, but if you're feeling incredibly rambunctious, pair it with a rich and fatty dish like beef bourguignon to experience its magic fully.

This incredible wine was crafted in honor of Heidi Bevan's beloved twin Heather. Both the wine and Heather are the life of any party. The flavors are a combination of intensity and seduction period. At first sip, you'll notice the rich taste of plum, cherry, and raspberry, but as you continue to drink, you'll experience a bittersweet chocolate flavor that adds a weighty depth to the wine. The taste is complex and intense, transitioning from dark fruit to mocha and coffee. The wine starts off gentle on the palate but quickly becomes bold and powerful. It has a high concentration and impressive weight, with tannins allowing it to age gracefully for decades. These tannins are already starting to soften and become more supple, making the wine more lively and present in the glass.
