We have our first event with one of the newest restaurants on Las Olas, Wild Sea at the Riverside Hotel on next Wednesday night.  We had many great events at this property in the past when the Grill Room was here and we look forward to this event to check out the new cuisine that is now in this historic property with the winemaker for Domaine Carneros TJ Evans.

Join us as we break bread with one of winemakers for Domaine Carneros, Taittinger Champagne domestic label.  This winery makes some of the best domestic sparkling wine including their Tete de Cuvee Le Reve.  The price for this event is $100 all-inclusive, for reservations call 954-523-9463.

Vintage dated each year, the Domaine Carneros Brut Cuvée represents the best of Carneros pinot noir and chardonnay made into a classic sparkling wine. The appellation is 100% Carneros. The Brut was aged in the bottle for three years before release.  It will continue to develop further depth and complexity as it ages.

The vast majority of sparkling wine and champagne in the world is made in the Brut style. Brut refers to the dryness or level of sugar of the wine. The sugar content of a Brut-style sparkling wine is 0-15 grams per liter.

Le Rêve, which translates to “the dream” in French, is a luxury Blanc de Blancs cuvee originally inspired by Taittinger’s Comtes de Champagne.  Blanc de Blancs means "white of whites" or white wine made from white grapes.

Eileen Crane and Claude Taittinger believe that the finest sparkling wine in the world is Blanc de Blancs made from Chardonnay grapes.  These wines have greater finesse and ageability and Le Rêve is no exception.   The Le Rêve Blanc de Blancs is generally 100% Chardonnay (with a  small percent of Pinot Blanc in some years).  Aged a full 6 years prior to release, Le Rêve drinks beautifully upon release and continues to develop for years in the cellar.

Our Le Rêve Blanc de Blancs has repeatedly been rated "The Best Sparkling Wine in America." This current release is a great successor to these wines and exemplifies the best of our estate-grown chardonnay.

Our classic Pinot Noir made to show off the superb qualities of our organic vineyard, is rich with fruit tones of black cherry, raspberry and black current overlaid with notes of chocolate, toast, clove and exotic spices. Luscious flavors end in a very long and silky finish.

Our original Pinot Noir produced in 1992 is a stylish wine showing of the "hand" of the winemaker.  It highlights smokey toasty aromas and is redolent with blackberries and dark cherry notes.  A wine that ages gracefully, it will intrigue for many years.

As with all of our Pinot Noirs, The Famous Gate is produced in small, open topped fermenters.  The wine is then transferred to barrels and aged for a total of ten months. An exhaustive French barrel program comprises seven cooperages that specifically air-dry wood staves for us for three years, yielding softer tannins and less astringency.

Domaine Carneros Brut Rosé is a wine of great balance, emphasizing fruity and floral characteristics to a greater extent than evident in the Brut or Le Rêve. It is made strictly with artisan attention to quality, with sourcing exclusively from Carneros and the use of time-honored Champenoise methods of production. A blend of 58% Pinot Noir, 42% Chardonnay, the Brut Rose is meant to be enjoyed at a fairly young age, when the fruity character is still predominant yet there is enough age to make the wine round and balanced.

A bit about Domaine Carneros:

The Domaine Carneros château is a landmark of the Carneros region. Completed in 1989, the classic 18th century château-style building was architecturally inspired by the historic Taittinger-owned Château de la Marquetterie in Champagne.

The Domaine Carneros château brings to Carneros the elegant style of a classic French chateau. Situated atop a knoll surrounded by its vineyards, the chateau offers exquisite views of endless vineyard-covered hills, it offers a perfect setting to savor wine.

The Pinot Noir Facility sits just behind the main château and was styled after a French carriage house. When completed in 2003, this state-of-the-art facility housed the largest solar collection system of any winery in the world.
