To Kalon Wine Company Napa Valley Cabernet Sauvignon Wine Tasting featuring the latest Legacy brand from Robert Mondavi Winery Friday, May 2, 2025 - 7:30 PM
"Making good wine is a skill; making fine wine is an art." --- Robert Mondavi
The wine bar is only open for our wine tasting events, but we are now selling a single table in the Wine Cave on any night that we are open for tastings. So pretty much Thursday, Friday and Saturday nights or any other night you see an event on the calendar we will take one reservation in the Wine Cave. We will take up to 16 people but will accept as few as 6 for a curated dinner by Chef Toni. We must know in advance what food items you want so you will have to coordinate the menu with Toni ahead of time, but she can put together any of your favorites from past Wine Bar menus or whatever you want if she has enough notice. The best thing about this table is the view of the wine, we have the largest selection of vintage wine in South Florida and everything is available at a retail price!! You may want to bring a sweater it is 64 degrees in the wine cave.
Another one of my favorite wineries that goes into the California winery hall of fame and the family is considered Royalty of Napa, even though no one with the family name is still employed at the winery, is Robert Mondavi Winery.
They had their bumps and bruises along the way and their wines have received much criticism over the years. The skeptics were even more vocal when the new regime at Constellation Brands took over with big business now in charge would the reputation of the wines slip further? To the surprise of some the exact opposite has happened as winemaker Genevieve Janssens is making some of the best wines in the history of Robert Mondavi winery today.
When Robert decided to go out on his own the first thing he did was purchase the To Kalon Vineyard (Ancient Greek for “the highest beauty”). Bob knew that to make one of the world's greatest wines he needed to have an exceptional vineyard site. By 1978, Robert Mondavi had acquired 250 acres of Crabb's original 359 acre vineyard. This vineyard is still considered among the finest sites in Napa today with most producer’s wines that yield this To Kalon name on the label charging over $300 per bottle for their wines.
The latest creation that has come out of the storied legacy of Robert Mondavi is To Kalon Vineyard Company. This is a new label that is dedicated to crafting unique expressions of Cabernet Sauvignon from this storied place.
To Kalon Vineyard Company combines tradition with a modern aesthetic under the expert hand of renowned winemaker Tony Biagi. A 5th generation Northern Californian, Tony is an acclaimed winemaker with over 25 years of experience. His journey includes prestigious wineries such as Plumpjack Estate, CADE Estate, Duckhorn Vineyards, and Sinegal Estate Winery, before he took the helm at Hourglass in 2012. Tony's unique understanding of grape phenolics, masterful blending skills, and a modern yet traditional approach to winemaking has garnered him a stellar reputation amongst peers and critics alike. In 2020, renowned wine critic Antonio Galloni of Vinious recognized his exceptional talent, naming him Winemaker of the Year.
Join us as we taste through the newest wines from Robert Mondavi’s legacy To Kalon Vineyard Company. These wines are amazing and just for fun we will showcase the Robert Mondavi Reserve Cabernet Sauvignon also from To Kalon Vineyard as a comparison.

2021 To Kalon Vineyard Co. Eliza's Red Wine Oakville
Price: $236.25 Your Price: $207.90 Quantity in Stock: 9
(96 Points) This red shows lovely range, as sweet tobacco, dried violet and warm paving stone hints all smolder underneath a vivid, pure and polished core of black currant and black cherry puree. Still youthfully taut, as the structure is prominent, this just requires patience to unwind fully. When it does, this will feel really suave. Cabernet Franc and Cabernet Sauvignon. Best from 2027 through 2045. (JM) Wine Spectator, Review Date: 11/2024
2021 To Kalon Vineyard Co. Highest Beauty Cabernet Sauvignon, Oakville, USA
Price: $236.25 Your Price: $207.90 Quantity in Stock: 9
The goal for our namesake wine is working with To Kalon Vineyard® as a whole, crafting a wine from 100% Cabernet Sauvignon, while capturing the purity, intensity, and diversity of this special terroir. With soft tannins, plenty of structure, richness, and aromatic excitement, this wine tells the story of the 2021 growing season. The grapes were harvested at night to preserve the freshness of the fruit. Careful sorting and a long, slow fermentation and maceration round out the wine and bring forward the broad spectrum of flavors and aromas inherent in this noble variety.

This incredibly low-yielding selection of Cabernet Sauvignon produces wines with high energy, a black-purple color, and exceptional aromatic and palate intensity—a high-resolution look at this noble variety. While not overly ripe or extracted, the wine has remarkable freshness, texture, richness, and length. Four extra months of barrel aging give it a high level of polish and a silky finish.

(96 Points) During my visit, I was also able to taste the 2010 Cabernet Sauvignon Reserve, which comes from a cooler year that saw a substantial heat wave later in the year. Including 4% Petit Verdot and 2% Cabernet Franc, this full-bodied, concentrated, yet balanced and impressively textured beauty offers up loads of chocolatey dark fruits, classy oak, lead pencil, and cedar-like aromas and flavors. It has a touch of Old World vibe, as do many 2010s, yet it brings classic Napa Valley fruit and texture and is a beautiful, balanced Cabernet with another 20 years of longevity ahead of it.
