Water and wine are the only two things that I drink for the most part and hey why do we need water at all… wine is 80-85% water!!

This is the first big party at the Wine Bar to start off the summer.  We will be hosting a series of more casual walk around events this summer that will featuring a specific theme but this first one is just to break us into the spirit of the summer.  Check out the outstanding Tavel Rose from CHATEAU DE MANISSY it was the highest rated rose wine in the latest issue of the Wine Advocate at (92 Points).  We will also be introducing the latest and greatest Saki from Japan produced by the former chef de cave from Dom Perignon Richard Geoffroy.

Richard Geoffroy, a former Chef de Cave at Dom Perignon, established IWA 5 Sake in 2019. Richard is a huge afficionado of Sake and imparts his experience and wisdom in blending, to make IWA 5 a sake that is authentic to its origins but also radiant, sophisticated, and pure. Geoffroy's amazing blending abilities are on display in IWA 5's Assemblage 3, which also reflects Richard's philosophy of blending and expressing harmony in all of his creations. Iwa is one of the few sakes we know of that practices the blending of different rice varieties. On the palate, this comes off immediately as sleek and sophisticated,soft, and very transparent. The palate exhibits notes of fresh lychee, tropical fruit, such as banana and mango with a mineral, clean finish.

(92 Points) The 2022 Tavel Cuvee des Lys appears a bit lighter in the glass than the Trinite bottling; the blend is 60% Grenache, 30% Clairette and 10% Syrah. Scents of crushed stone, citrus and strawberries appear on the nose, while the medium to full-bodied palate is tighter and more structured, revealing an almost stony austerity that lingers through the long finish. Beatrice & Pascal Lambert believe that crafting the finest, richest Chinon possible begins with respect for the soil and the vine. Their 14 ha domaine, Les Chesnaies, sits in Cravant-les-Côteaux, just east of the center of Chinon, and is home to some of the finest terroirs for production of artisanal Cabernet Franc and Chenin Blanc in the region. Gravelly, alluvial soils with plentiful silica produce wines of richness, while calcareous clay (which includes deposits of chalky tuffeau) and silex impart regional distinction and finesse. Beatrice and Pascal seek to channel this ‘geological trilogy’ through their wines. Each cuvée is assembled to express the top features of the particular parcel of soils in which it grows. Famous as a historic site but also for its premium Rosés, Château Sainte Roseline is a Provence icon.

Its pale color is slightly salmony. The complex and intense nose reveals fine notes of peaches and mangos. The beautiful liveliness and persistence of the aromatic notes at the end of the palate make this a very crunchy wine. A minty finish sublimates its beautiful freshness.
