Unless you are talking of white Burgundy which is becoming hard to find as the last two vintages were troublesome and the world wide demand for these wines is skyrocketing.  Try to find 10+ year old white Burgundy and now your talking unicorns.  We just landed a few cases from our favorite producer in Chablis that are 11 years old and to be able to offer vintage Grand Cru Chablis at under $100 a bottle is ludicrous!!

2011 WILLIAM FEVRE CHABLIS VAUDESIR GRAND CRU CRU

At 11 years of age these wines are singing with the nervous tension of youth gone and the fruit starting to take center stage but still with a bright hand of acidity these 2011's are in perfect harmony today.  A complex bouquet lemon blossoms, sea shell, chalk, wet stone like minerality very distinctly Chablis and the complexity is certainly Grand Cru.  Rich and creamy on the tongue but with that razor like acidity and intense minerality that lingers for over a minute on the palate.  This wine has a finish that goes on and on and it is drinking beautifully right now but will age for another decade or two in the cellar.  Finish 60+  Most Excellent +


 


2011 DOMAINE WILLIAM FEVRE CHABLIS BOUGROS GRAND CRU

An expressive bouquet of candied lemon and lime citrus fruit with hints of white flowers and a briny mineral quality that needs a few hours to really express itself the bouquet on this wine is even better on the second day.  Bright and zesty on the tongue with a smooth creamy texture but has a firm hand of acidity making the tongue tingly and pop with acidity, wonderful length and a finish that goes on and on.  This wine will age another decade or more in the cellar easily but will be hard to resist once you have tasted it.  Finish 50+  Most Excellent


All the William Fevre Chablis that we have in the store:


Chablis is the northernmost region of the Burgundy appellation.  The wines coming from this region are 95% white and most of that is Chardonnay.  The wines have crisp, racy acidity, and very lean and sometimes tart fruit. Crisp and lean in style rather than big and fat like the wines of the Côte d’Or, the wines of the northern most region in Burgundy are unique and stylistically diverse enough to be mistaken for a sauvignon blanc.   The Grand Cru and Premier Cru terroir here is limestoney-chalk, they have more in common with Champagne than the clayey soil of the Cote d‘Beaune.  The only grape permitted here is Chardonnay, locally known as Beaunois.  It must have a minimum alcohol content of 10%, from a yield of 50hl/ha, about 4 tons per acre.  The village wines are not “keepers”, they should be consumed within the first few years, the Premier and Grand Crus, however, can be some of the longest lived wines of this varietal from anywhere in the world. 


The Chablis region covers four different appellations – Petit Chablis, Chablis, Chablis Premier Cru and Chablis Grand Cru.  Despite the world renown recognition of the Chablis name, the post-war lack of workforce, a weak demand and some poor vintages culminated with the disastrous frost of 1956, when the locals were skiing down the what is now the Grand Cru of “Les Clos” in February. The region was facing extinction.  Replanting began on the finer slopes and has continued to expand rapidly during the last two decades.  Although further expansion is possible, the true quality of Chablis comes as much from limestoney chalk soil known as Kimmeridgian after the Dorset village of Kimmeridge, as from the Chardonnay grape.  One school of thought is in favor of expansion, maintaining that the world-wide demand for Chablis is inexhaustible; the other argues that true Chablis is from that chalky soil and that expansion outside the geographical region should be resisted.  A run of good, productive vintages in the 1980’s have served to enhance the quality image of Chablis again as we slowly begin to forget the jug wines labeled Chablis from large California producers who should remain nameless.  Today the best wines of the region of Chablis are starting to make it back into the cellars of wine collectors.  Check out these last few release from Chablis they will benefit from a few more years in the cellar and develop into something like these 2011’s in time.


2015 DOMAINE WILLIAM FEVRE CHABLIS BOUGROS COTE DE BOUGUEROTS GRAND CRU

(93 Points) The 2015 Chablis Grand Cru Bougros Cote de Bouguerots was the standout wine when I tasted the range of William Fevre from barrel. Now in bottle, the nose has closed down, but there remains a brooding intensity here and superb mineralité. The palate is very well balanced with a touch of orange zest and quince on the entry. There is a keen line of acidity here and quite a powerful finish that lingers long in the mouth. Give this three or four years in bottle and it should offer another ten years of drinking pleasure.  Wine Advocate


2017 WILLIAM FEVRE BOUGROS CHABLIS GRAND CRU

(93 Points) I was unduly conservative with my assessment of Fèvre's 2017 Chablis Grand Cru Bougros, as this bottle was showing very well indeed, unfurling in the glass with aromas of white flowers, fresh peach, Meyer lemon and crushed chalk. It's full-bodied, deep and fleshy, with excellent concentration, racy acids and chalky structuring extract, concluding with a precise finish. While this Bougros is still quite demonstrative, it is showing more complexity and tension after another six months in bottle and is well worth seeking out.  Robert Parker's Wine Advocate

This wine has that classic sea shell like minerality and lime citrus and green apple white flowers. A nice richness on the palate with tongue tingly minerality and a long zesty finish, that chalky sea shell mineral notes lasting through the finish. Finish 40+ Excellent


2018 WILLIAM FEVRE CHABLIS VAULORENT 1ER CRU

This is the only premier Cru Chablis on the Grand Cru Slopes Right next to Le Clos, a baby grand cru, good concentration on the nose with bright lemon blossom fruit, white grapefruit with a good hand of minerity, that sea shell like salty briny character.  The 2018 has more energy than 2016, more generous fruit than 2017.  Bright high toned lemon citrus and white grapefruit like notes with a briny mineral laved finish.  Finish 45+            Excellent +


2018 WILLIAM FEVRE CHABLIS VALMUR GRAND CRU CRU

With its terroir split into two parts on either side of the Sainte Vaubourg fountain path, it has slightly deeper clay-limestone soils than the other Grands Crus. Its shape is reminiscent of a small valley hence the name \"Valmur\".Elegant bouquet with fruity notes against a mineral backdrop. Powerful with great structure, the wine is smooth and delicate on the palate.


2018 WILLIAM FEVRE CHABLIS BOUGROS COTE BOUGUEROTS GRAND CRU

(96 points) Outer quote mark One of three producers in Chablis to bottle wine under this label (or a slight variation of its spelling), this comes from what is generally considered the best bit of Bougros, on a slope close to the River Serein. Picked early in 2018, this is fresher and more refined than it can be in warmer vintages, showing beeswax and citrus perfume, refined oak and lingering freshness. Located on the Côte des Vaillons, this appellation has 8 distinct “lieux dits”. With a soil base more limestone than clay, sitting on hard, compact Portlandian limestone, it represents all the different types of Chablis terroir under one appellation.Very pronounced floral and fruit driven bouquet, with lovely freshness and a few mineral notes. Full-bodied palate, with lovely roundness.

Medium to full-bodied, satiny and enveloping, with racy acids and a long, iodine-inflected finish, it's the most complete premier cru in the range. I left my tasting with Didier Séguier wondering if the 2019s might be the best vintage I've ever tasted at Domaine William Fèvre. At this address, the vintage's low yields have translated to wines of remarkable concentration, but Séguier has also achieved levels of cut and tension that are rare in contemporary Chablis. My only reservation (if one can call it that) is that these are serious, structured wines that are tightly wound and introverted after their recent bottling, a tendency no doubt amplified by their DIAM closures; therefore, many are surely destined to be drunk too young. But readers who purchase Fèvre's top 2019s and forget them for more than a decade are going to be richly rewarded, of that I'm confident. Coming from a family that has been in the Chablis region for more than 250 years, William Fèvre’s father was already a great wine-maker after World War II. His son William founded the Domaine de la Maladière and announced his first harvest in 1959.

For many years, William Fèvre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot keenly and skillfully so as to make wine whose personality reflects the authenticity of the soils from which they spring.

In 1998, the venerable Henriot family from Champagne succeeded him. To continue these focused efforts, the Domaine was taken up with the constant desire to make indisputably genuine and fine wines, and above all with bringing along a very personal expertise in Chardonnay. All the efforts have but one goal – to finely express the most subtle variations in the greatest Chablis crus.

This attachment to the value of the terroir has also allowed the William Fèvre Domaine to establish an exceptional estate by acquiring some of the best Chablis vineyards.

With its 47 hectares Domaine, of which more than half are in Chablis Premier Cru (12 hectares) and Grand Cru (15.2 hectares), William Fèvre owns the widest array of Grands Crus and benefits from ideal conditions to produce excellent Chablis.

Located on “historical” terroirs, dating from before the extension of the vineyard areas that occurred in the 1970’s, the William Fèvre Domaine is at the very heart of the vineyards, on soil that mixes marl and clay-rich lime, as well as a Kimmeridgian subsoil rich in minerals and oyster fossils that give Chablis its unique mineral character.

The Chablis terroirs constitute an ideal environment for the cultivation of Chardonnay but this special soil is not enough to elaborate exceptional wines. One needs all the know-how and experience that comes from men to help a terroir live up to its full potential, and to produce grapes and wines worthy of their appellations and faithful to their origins.

At William Fèvre, everything is done, to reach this goal. Grapes are hand-picked and put in small crates, the bunches are rigorously sorted out, pressings are short, the must carefully settled, and a fine balance is established, according to the vintage, for the vinification between vat and cask. Since the 1998 vintage, the proportion of new casks was reduced so as to not dampen the subtle variations of Chablis terroir. These methods and precautions allow us to obtain rich wines of a very high aromatic purity that hold on their typicity, whose principle characteristics are minerality and freshness.
