Fermented in stainless steel with multiple punchdowns per day (but no submerged cap), it's then racked off early and aged for 24 months in 30% new French oak barrels. Pure mint and liquorice scents with deep dried cherry, leather and blood orange notes. Very elegant with great persistence and a classic finish."  Decanter
