The three friends who founded COS were regarded as the youngest winemakers of their generation in 1980. The winery follows biodynamic faming principles in order for the vines to maintain a balance with nature and express their true character and terroir. Eventually they also got rid of the most of their oak barrels and start using amphoras. Clay vessels have been used to ferment and age wine since ancient times. The COS name is now immediately associated with amphora wine from Sicily.
