Planted in 2014, the Chardonnay blocks are dry farmed at 1500 feet elevation and made up of two unique clones, Dijon 96 and Wente. The grapes were whole cluster pressed to neutral French oak barrel for fermentation. Periodic stirring of the lees was done for texture and richness. The wine retains good acidity because of a partial malolactic fermentation. We hope you enjoy our first Estate Chardonnay. Clones Wente (50%), Dijon 96 (50%), Soils Bearwallow series - weathered sandstone Trellising Vertical shoot positioning, spur pruned Fermentation Whole-cluster pressed to barrel ferments Oak Neutral French oak, 10 months Alcohol 14% pH 3.34 TA 6.1g/L Production 219 cases (9L)
