Vinification Vinification at the Domaine Sérol. Ancestrale method. Direct pressing. Alcoholic fermentation at low temperature with indigenous yeasts until the wine reaches 8% alcohol. The wine is then bottled and fermentation continues until the wine reaches 8 % alcohol and 5 bars of pressure. The bottles are then disgorged to remove the deposit.
