For the Brut Réserve, he assembles a blend of 50% Chardonnay, 40% Pinot Meunier, and 10% Pinot Noir all grown on his minuscule estate. The Chardonnay provides elegant white floral and mineral aromas, while the Pinot Meunier enhances with dark berry components, and the Pinot Noir provides the final structure and depth. This is a Champagne that is bright with citrus-like acidity but possesses a rich, creamy body to please and delight the palate.
