"If all be true that I do think, There are five reasons we should drink: Good wine a friend or being dry or lest we should be by and by or any other reason why."

- Henry Aldrich

We have a lot of good reasons to drink at the Wine Watch: like days that end in “Y” Monday, Tuesday, Wednesday, Thursday, Friday and Saturday nights!  We don’t take Sunday off… that is Margherita night at the Lampasone house!!!

We just returned home from a trip to California wine country and one of the best experiences we had on this trip was Javis Estate.  This winery is celebrating its 30th vintage this year and William Jarvis will celebrate his 100th birthday!  Given all the people we have sent to Jarvis over the years based on the wineries reputation, I can’t believe that this is the first time that I have ever visited this landmark estate in Napa Valley.

I heard the story while this property was being built of the massive caves and how big the property is compared to how small the vineyards are with most of the property dedicated to being a nature preserve.  Jarvis is a truly unique estate and one that needs to be seen to be believed.  The caves are truly spectacular and are so large, 45,000 square feet that they can house the entire winemaking facility, as well as the barrel aging and also has some unique spaces to host events.  The property is truly amazing and the experience they offer really captures the imagination and the vision the Jarvis family had of building a world-class wine estate in Napa Valley.

We invite you to experience the wines of Jarvis Estate with our new friend, the VP of Sales Sil Coccia whom we met on our recent visit.  After the incredible experience we had of course we offered to host an event with him at the wine bar the next time he was in South Florida.  I did not think that it would be a few weeks after our visit but why not… the only prerequisites to hosting an event at the wine bar for me is the quality of the wines and everything that they poured for us during our visit to the winery was most excellent.

Join us as we welcome Sil to South Florida for a special evening of Jarvis Estate wines along with a delectable menu to complement these amazing wines.  The fee for this tasting which includes dinner is $325 + tax, for reservations call 954-523-9463 or e-mail andy@winewatch.com

A bit about Jarvis Winery:

A group of people standing in a doorway

AI-generated content may be incorrect.

William Jarvis was born in Oklahoma, a dry state! It wasn't until the Navy took him to California that he enjoyed wine for the first time, and he probably appreciated it more at that time than those who grew up with wine.

After attending Annapolis and serving in the Navy, William continued his studies in both technical and liberal arts for eight more years at the University of California Berkeley, Stanford, and various French universities. Turning to business, he headed his own telecommunications company in Silicon Valley.

Leticia Jarvis was born in Puebla, Mexico where she finished her college degree and met William.

After their marriage, William and Leticia traveled and studied abroad, finally adopting France as a part-time residence. For many years, they maintained a Louis XIV Chateau in the Vesle Valley near Reims in Northern France. The two spent time at French universities concentrating in their shared interest, French literature. William and Leticia also enjoyed the many wines found in the different regions they visited, eventually gravitating to the fine Bordeaux reds and Montrachet whites.

Not to neglect Leticia's Spanish culture, Leticia, William and their young son William, spent summer months in Spain. There they studied Spanish literature at Salamanca, the oldest university in Spain, and also came to appreciate Spanish wines and Zarzuela (Spanish Opera).

The two eventually acquired a weekend estate in Napa and slowly immersed themselves in the culture of winemaking. They first spent time studying how to best plant a vineyard. Next came a careful 10 years nurturing the vineyard and finally the winery itself.  Built underground to provide the desired cool, humid conditions, the winery utilizes a combination of rotary fermenters and classic oak cuves from Cognac to help create the Jarvis Estate signature style of wines.

Another important activity is a music conservatory the Jarvis' founded in the Napa Valley. Housed in a 100-year-old stone winery building, the Conservatory conducts master classes in the various arts that comprise operas. Their annual opera workshops culminated in area-wide “Festivals of the Zarzuela” bringing Spanish opera to the United States. A Baroque Dance Workshop followed. Leticia is now bringing new art film presentations to Napa including current European opera productions via the internet and presented in High-Definition. Other activities of the Jarvis Conservatory include workshops and performance for the annual Puppet Festival, as well as the Napa Valley Youth Symphony.

Both Jarvis Estate and the Jarvis Conservatory draw upon a lifetime of education and are part of the Jarvis’ celebration of their lives passions.

All Jarvis wines are produced from estate vineyards, located high above the city of Napa, in the beautifully rugged mountains between Mt. George and Milliken Canyon at the southeastern end of the Napa Valley. The vineyards are planted in gently sloping meadows one thousand feet above the valley floor. As the cool maritime air passes over the Carneros flats and begins flowing into the valley, it falls about seven degrees in temperature for the thousand feet of vertical rise. As such, our vineyards tend to be cooler by several degrees than the famous Carneros region! These cooler temperatures allow a long “hang time,” which permits a long, slow fruit maturation for maximum flavor and concentration at harvest.

The Jarvis Estate winemaking facility is entirely contained within 45,000 square feet of cave tunneled into the scenic Vaca Mountains, four miles east of downtown Napa. It is not only a visual masterpiece, but a technical masterpiece as well.

Due to the invariant temperature and high humidity level of caves, wineries have typically used caves for the barrel aging of wines. Jarvis Estate was the first in this country to tunnel a cave so large that it could hold the entire winemaking operation. With the help of chief geotechnic consultant Gregg Korbin and the largest computer at University of California Berkeley, William Jarvis was able to successfully plan and design the large chambers of our underground winery. As the cave extends further into the mountain, the chambers become larger. Pushing the state of the art, the last chamber could comfortably contain two full basketball courts. These chambers allow even the large fermentation tanks to be underground and out of sight, thus preserving the unmarred beauty of the natural outside environment.

The underlying principle behind the Jarvis Estate cave construction is that a parabolic shaped tunnel is inherently stable.  As such, the cave tunnels and chambers are in the shape of a true parabola. Throughout the cave you will find many references to its parabolic structure. With the help of Jim Gangwer and other artisans, the cast bronze doors, brass wall sconces, arched alcoves and fiber optic chandeliers add to the mystique and beauty of the cave.

“English mining machines, which happened to be very good at turning corners, were used to generate the very useful circular pattern of the winery. This circular design allows for a very efficient operation, and allows the winemaker and his lab to be no more than a few hundred feet from the farthest aging galleries” –William Jarvis.

Capitalizing on the natural underground water source, the stream and waterfall running through the center of the winery function to maintain the humidity level in the cave at an ideal level for the barrel aging of wines. However, the cascading water also provides a beautifully calming aesthetic to all who encounter it.
