We are trying to keep the calendar of events full at the Wine Bar so we have at least Thursday, Friday and Saturday night filled with wine tasting events!  And we have a schedule of events that you can count on some of my favorite wines coming out in August and September with our focus these two months on Amarone and wines from Valpolicella.



 



And remember the Wine Cave is available Thursday, Friday and Saturday nights for a private dining experience!

We have a minimum of 6 people to reserve the table in the Cave but we will take up to 16 people for a curated dinner by Chef Toni.  We must know in advance what food items you want so you will have to coordinate the menu with Toni ahead of time, but she can put together any of your favorites from past Wine Bar menus or whatever you want if she has enough notice. The best thing about this table is the view of the wine, we have the largest selection of vintage wine in South Florida and everything is available at a retail price!!  You may want to bring a sweater it is 64 degrees in the wine cave.





Amarone is one of the most unique wines in the world because they use a style of production known as appassimento.  This style of winemaking is when they dry the grapes before they ferment them making the wines more concentrated and, in most cases, higher in alcohol than other wines that are made fermenting the grapes right after they are picked. 



 



The ripasso technique which is used here is also unique in the wine world and was also created in the Valpolicella region of Italy.  This is a method of production where they pass the juice of grapes that were crushed right after harvest aka already fermented juice (wine) over the must of the freshly crushed dried grapes used to make Amarone.  The must contains a little yeast and sugar so the wine now goes through a second fermentation giving the resulting wine more body, flavor and of course more alcohol!  This wine is known as Valpolicella Ripasso and if you want to learn more about these amazing wines come out and taste some of the best that the land of many cellars has to offer.

Our first experience with these wines was in the fall of 2000.  The importer brought several of these wines by the store to sample.  The concentration, depth of flavor, complexity and length on the palate of each and every wine sampled that afternoon was simply amazing.  From the Valpolicella to the Recioto, every wine spoke of the genius that defines this young winemaker’s wines.  Largely self-taught, Tommasso uses a diverse array of barrels, ranging in size from barrique to large foudre and mixing such exotic woods as acacia, mulberry, cherry and almond in with the unusual cask sizes.  Mr. Bussola does nothing by the book; he uses taste, smell, sight and instinct to make his wines and the results are compelling.



 



Since our first experience with these wines, we have quizzed every producer from this region that has crossed our path about Mr. Bussola’s wines.  Their eyes immediately light up and they all have similar praise for Mr. Bussola and his handy work – most say he is the rising star of Veneto, but all agree that his wines are the work of an unconventional wizard with incredible results.



 



A brief history of Tommaso Bussola:



Tommaso Bussola doesn't come from a family with a tradition for viticulture and vinification. However in the early 1980s, his Uncle Giuseppe, who owns a few vineyards in San Peretto di Negrar, decided to involve him in the viticulture, which had always been utilized for production of wines for the family. With time, his curiosity turned to passion and Tommaso began to personally make wine from the grapes that were grown in Uncle Giuseppe's vineyards.      



 



Together with his wife Daniela they bought a new winery, Casalin, with great sacrifice. The fabrication has a total of 25 acres and the actual house/cellar in via Molino Turri was also completed during those years. "I think I've have gotten ahead by going back in time" says Tommaso when asked about the technology used for vinification. "I still work in the cold, without changing the temperature of the wine". Concerning methods used for withering grapes, modern techniques don't exist for Tommaso: he uses long periods that can take up to six months.         

This wine producer loves intense, full-bodied wines and likes to experiment with wood. The aging times are never the same and the type of casks is always different. Depending on the characteristics of each harvest, Tommaso decides what type of cask to use and how long to age the wine.  



 



There are two main lines of production: BG, dedicated to his Uncle, is more traditional, while the second, TB, comprises wines that are aged for longer periods in new casks.  Then, in great vintages they make a single vineyard Amarone known as “Vigneto Alto” which is a step above the rest and among the best wines produced in Valpolicella!

When Veneto legend Giuseppe Quintarelli was asked years ago to name the region’s next superstar, he didn’t hesitate: Tommaso Bussola.



 



Quintarelli’s prediction began to be realized in 1999, when Tommaso’s 1995s were released. Among the countless accolades he received, Gambero Rosso gave him the first of many Tre Bicchieris for his majestic Recioto TB.



 



Originally trained as a stone mason, Tommaso took over over his uncle’s Valpolicella estate—with its prized old vineyards in the heart of the Classico zone—in the mid-1980s. While vineyard work came naturally to him, he experimented relentlessly, and absorbed information and ideas from every source available. With each passing vintage, his wines came to show more polish, finesse, intensity, and personality.



 



By the late nineties, his style had matured, and his wines had become world-famous for their incredible intensity of fruit. Like other top Veneto winemakers, he uses new barrels, but any hint of new wood is hidden by cascades of lush, opulent fruit.



 



The key, we think, is not only the age of his vines but the fact that they are nearly all naturally low-yielding ancient clones: Corvinone (40%), Corvina Grossa (25%) and Rondinella (20%).



 



Corvinone, in particular, is quite rare today because of its low yields and finicky growing habits. Yet, Tommaso claims it is the Corvinone that gives his wines their depth. He calls it the “Super Corvina,” saying that it produces stronger, denser, richer, more perfumed wines.



 



Small percentages of old vine Cabernet Franc, Cabernet Sauvignon, Dindarella and Pindara round out the cépage, along with new experiments like Teroldego and Merlot.



 



Despite being the estate's standard wines, the Ca’ del Laito selections are near the summit of the Valpolicella pyramid. Only estate fruit is used, including declassified wine from top sites like Alto, Soto el Barbi, Casali and Ca’ del Laito.

The grapes to produce Valpolicella Classico Superiore are picked and selected the first and second week of October. 50% of the grapes is immediately pressed in truncated cone oak vats where fermentation with indigenous yeasts starts after 2 days of maceration.



The must stays with its skins for about 18 days, during which several pumping-overs and skins submersions are performed. It is then racked off and left in a steel tank for 3 months. The other 50% of the grapes is left to dry in plastic plateaux for 3 months and then pressed. Fermentation starts immediately with indigenous yeasts and after 10 days the Valpolicella Classico produced in October with the first 50% of the grapes is added.



In the following 30 days while the wine ferments several pumping-overs and delestage for the skins submersion are performed again. Once fermentation is completed the wine is racked off in steel tank to decant for 10 days. Finally, the wine is racked off again to wooden barrels to finish its aging.

In January the grapes are selected, pressed, and put in tanks where, after about 15 days, fermentation starts thanks to selected yeasts. In the following 50 days several pumping-overs and delestage for the skins submersion are performed. The wine is then racked off and moved in a steel tank where its gross lees is decanted off. After about 20 days it is racked off again and moved to wooden barrels where fermentation and aging are completed.



Aging: 48 months of aging



55% in 500 l tonneaux twice used



30% in 225 l barriques twice used



15% in 25 Hl barrel



 



Bottling:  Amarone Classico is bottled after 4 years of aging and it stays 6 months in bottle before being sold.



The production amounts to about 20.000 bottles.

I found it awfully hard to put my glass down. It is extremely rare to encounter an Amarone that balances depth with clarity to this degree of profoundness. A bit about Amarone and Valpolicella:



 



Valpolicella, according to some accounts, means “valley of many cellars,” which seems fitting.  It is derived, they say, from the Greek word poli (many) and the Latin cella (cellar).   This area is approximately 27 miles long and 5 miles wide, it passes north and west of Verona, extending from the Adige River to the Cazzano Valley.  Bardolino and Lake Garda lie to the west and Soave to the east.  The land ranges in altitude from 490 to 1,475 feet above sea level.  The vines in the classico district to the northwest of Verona, are planted on the hillsides and mountain slopes of the valleys of the Adige tributaries and the Fumane, Marano, and Negrar torrents.  Some of the vineyards are terraced with stone.  The cretaceous, calcareous soil is of glacial origins.  And volcanic activity in this area contributed elements to the soil as well.  



 



The area around Sant’Ambrogio is considered the heart of the Amarone production zone.  Within this area, northeast of Gargagnago, is a valley called Vaio Armaron, which may have given the wine its name.   The blend of grapes typically used in Valpolicella is Corvina (40%-70%), Rondinella (20%-40%), Molinara (5%-25%) and may contain up to 15% Negrara Trentina, Rossignola, Dindarella, Barbera, and/or Sangiovese.  Before 1989 producers were allowed to add as much as 15% of grapes, must, or wine from outside the zone to correct problems from a weak vintage, but this practice is prohibited today.  Corvina contributes color, body, bouquet, flavor, and the basic Valpolicella character to the wine.   Rondinella, which is resistant to disease and rot, is added for its color and strength, tannin and vigor, it also adds some refinement to the azromas.  Molinara, or Mulinara, is also known as Rossara Veronese and Rossanella, is blended in to make the wine lighter and more drinkable.  It also contributes dryness and acidity, as well as that characteristic bitterness.  Negrara, adds softness, freshness and early drinkability.





The first dry Amarone, according to writer Cesare Marchi, was the result of a fortunate accident.  In the early 1950s, Adelino Lucchese, Bertani’s cellarmaster, discovered a barrel of wine in the cellar that had been overlooked and neglected for some time.  Certain that it had spoiled he was about to discard its contents, when curiosity prompted him to take a taste just to see what had happened.  He was astonished to discover that the forgotten wine had a velvety texture and a penetrating perfume, a slightly bitter taste, but not at all unpleasant. 



 



There is however evidence that the Romans made a type of bitter Recioto for diabetics or other people who couldn’t take sugar.  Sandro Boscaini of Masi pointed out that some of the oldest families in Valpolicella, the Count Campostrini and Count Serego Alighieri, as well as his own produced an Amaro, a dry Recioto.  This would seem to indicate that Amarone is considerably older that Marchi admits.  According to another book called Valpolicella Spolendida Contea Dei Vino, written by Lamberto Paronetto, the name Amarone has been in use since the eighteenth century.  It became popular at the beginning of this century and the name could very well be derived from the Italian word amaro, meaning “bitter” (scholar Scipione Maffei, writing in the first half of the eighteenth century, refers to an amaro, a dry wine from the Valpolicella area), or it could come from Vajo Armaron, where some highly regarded Amarones have been produced for ages.
