A historical player in Chablis, the Domaine Laroche has embodied Burgundian viticultural excellence since the 9th century. This emblematic estate, now owned by the Advini group, stands out for its meticulous know-how and cuvées that accurately translate the complexity of the local climates. Elegance, purity, and aromatic finesse are the watchwords of this renowned house.
This Premier Cru originates from typical Kimmeridgian soils, rich in clay-limestone marls and marine fossils, notably the famous Exogyra virgula. This terroir, characterized by a marked slope and a cool microclimate, nestled in the heart of a forest environment, promotes the production of tense wines, with a pronounced mineral profile. The aromas evoke flint, the signature of a great Chablis.
2022 Domaine du Roc des Boutires Pouilly Fuisse “En Bertillone”

Domaine du Roc des Boutires has 11 acres (4.2 hectares) on an east-west oriented strip at the same latitude of the village of Pouilly on Jurassic limestone interlaced with clay and shale, the same substratum as the Premier and Grands Crus of the Côte d’Or. The vines of Chardonnay, mostly planted in the beginning of the ‘70s, are flowering here with the greatest respect for the natural environment.
All wines come from the estate vineyard exclusively. Exclusively coming from the terroir ‘En Bertilionne’ the highest terroir of Pouilly-Solutré village sitting at 350m elevation with deep chalky limestones marls.
The palate is vibrant, with a hint of bitterness and biting acidity. The balance is harmonious and highly nuanced, with notes of peach and honeysuckle.
2023 Domaine Leflaive Macon Verze

This was the wine that started it all back in 2004 when the domaine, then under Anne-Claude Leflaive, purchased this small 14.65-hectare plot that was subsequently to spawn the single vineyard wines below. We named it then, and still consider it now, one of the least expensive fine wines in the world, as well as being one of the most expensive Mâcons. Taut, reductive, “struck match” nose, sweetly rich, piercingly bright and zesty. The palate is juicy, with succulent fruit, delectable freshness and subtle tension to the finish.
The Mâcon-Verzé is a wine of great purity, both floral and mineral, expressing a lively energy, ready to be enjoyed earlier than the wines of Puligny-Montrachet.
2021 Chateau du Moulin-a-Vent 'Moulin-a-Vent'

A smattering of ripe red fruit wafts from your glass along with black plum, dried cranberry and red raspberry. A bit about William Davis:
William Davis is Wilson Daniels’ Director of Education. Working in the Texas and Colorado hospitality markets since the age of 15, William has racked up an impressive array of accolades and certifications over two decades in the industry. In addition to Advanced Sommelier with The Court of Master Sommeliers (on his first try!), Certified Wine Educator (CWE), Advanced Certification with the Wine and Spirits Education Trust and certification in wine and spirits serving, William is a member of the Guild of Sommeliers, and an Ambassador for l’Ecole du Vin de Bordeaux, a Bordeaux wine school accredited by the Bordeaux Wine Council. He also earned the distinction of two-time regional champion in the Central (2012) and Central-Great Lakes (2013) Top SOMM competition and served as co-host for several years on WineGuysRadio before starting up TerroirRadio to provide mentorship for industry newcomers and veterans alike.
Davis is no stranger to talking about wine in front of a crowd—he’s led seminars and talks at Santa Fe Wine and Chile Fiesta, Taste of Vail, the Denver International Wine Festival, the James Beard Foundation’s Cruise Series, and the Park City Food and Wine Classic. As Director of Education—a new role created to facilitate interdepartmental operations and discover new methods for delivery knowledge—William will distribute his expertise more evenly across the board with his signature outgoing demeanor and willingness to lend a hand wherever it’s needed. In the meantime, William is currently pursuing two of the most prestigious degrees in the industry: the Master Sommelier (CMS) and Master of Wine (IMW).
Originally from Texas and raised in London, England, William is a graduate of University of Texas in Arlington, where he majored in Economics and participated in soccer. He lives in Denver, Colorado, where he enjoys kicking a round ball around with old people like himself, and watching Arsenal and the Colorado Rapids win every game they can.
