Terroir & Vineyard



The vineyard of Domaine Roche has 15 hectares of vines with an average age of 50 years. This allows a very deep roots, causing a great exploitation of land and a full expression of the terroir.



It is distributed in the municipality of Cairanne between the plate of "Garrigues' consisting of soil pebbles formed of red clay which thrive optimally Grenache and Carignan old and the land of the" Mountain ", formed by land of hills of white limestone clay, facing south, favorite place for Syrah.



Vignifications & Ageing



The harvest of the Estate are exclusively hand. A sorting is done in the vineyard to avoid prolonged contact with grapes that may be of lower quality. Arrival winery, the grapes are de-stemmed entirely.



Each parcel is vinified separately in thermo concrete vats for the Grenache, and thermo regulated stainless steel vats for Syrah.



The fermentation times are 20 to 30 days at temperatures of 25-27 ° C.



Finally a flock of 8 to 10 months is in cement tanks for the Grenache, and barrels and half barrels for part of Syrah.



Assembly



Cairanne is 70% Grenache and 30% Syrah. He comes from a selection of the oldest vines of the Domaine with naturally low yields (30 to 35 hl / ha).



Half of the Syrah was aged in oak barrels and half barrels, aged at least a year to keep the fruits of the harvest.
