Elaboration: Fermentation takes place at temperatures between 57° and 61° in tall/slender stainless steel tanks. Aged 18 months on lees, and an additional 24 months in bottle prior to disgorgement.

"Pale, bright, copper-tinged orange. Restrained aromas of strawberry, watermelon and fresh herbs. A faint touch of sweetness (six grams per liter) lifts the wine's subtle red fruit and saline flavors, with a touch of minerality giving the back end a tactile quality. I like the balance between the subtle red fruit, lees and mineral components.
