I guess wine is considered to be above the law when it comes to the FDA and other organizations that regulate what we consume.  Even though most wines are made with very little other than the grapes themselves, there is no way to know based on the label, it is one of the only products that you consume that does not have a list of ingredients- even bottled water is required to have a list of ingredients today.

The best wines today are made with either: sustainable, organic or biodynamic practices and this is not only to make better wines but to maintain better vineyard health.  Just like it is bad for us humans to take antibiotics every time we have a little sniffle or cough, the vineyards are healthier and will live longer more productive lives if they are maintained with natural principles.

2017 Amancaya Malbec Cabernet Mendoza

(91 Points) Approximately half of the volume of the 2017 Amancaya matured in oak barrels, and the other half was kept in concrete vats for one year. This comes from vineyards in Altamira, and the barrels used for the élevage are mostly in barriques produced by Lafite that have a very light toast, with the idea to preserve the aromatics of the wine and let it breath and provide structure in the élevage without interfering with the aromas. The oak is very nicely integrated and folded into the fruit, and the wine comes through as quite pure and fruit driven, with moderate ripeness and a harmonious palate. This was born as the classical second wine in a Bordeaux sense. This wine is sold in Argentina as Petit Caro. 350,000 bottles produced. A bit about Los Vascos Winery:

Some of the next generation of world class wines are coming from South America and when you have the knowhow from the team at Chateau Lafite Rothschild which has several hundred years of experience with Bordeaux varietals you know that it’s only a question of time before great things happen and after replanting most of their vineyards in the early 1990’s the new releases from Los Vascos are starting to show the hard work from the team at Chateau Lafite Rothschild is starting to pay off. 

Grape vines were planted in the north of Chile in the 16th century, in the wake of the Spanish conquistadors. Production expanded rapidly and the country was soon exporting to Peru, challenging imported wines from Spain. The Echenique family, of Basque origin, planted vineyards in the Peralillo area of the Colchagua province around 1750 and in the 19th century, the same family was part of the rapid expansion that took place in Chilean wines, at the initiative of a handful of pioneers who were inspired by the French model. The first French grapes were planted in the Cañeten Valley of Colchagua in 1850 but when phylloxera ravaged Europe’s vineyards, Chile’s production increased dramatically. Vineyards went from 9,000 hectares in 1870 to 40,000 hectares in 1900. The first exports of wines to Europe took place in 1877.

In 1947, production in the Cañeten Valley of the Peralillo region was reorganised and rationalised. Plots of land were cleared and prepared for planting, water supply and storage systems were put in place and cellars equipped with cement tanks were built. The “Cañetenes” wines gradually built up a good reputation. However, the land reform measures which came into force in the late 60s and early 70s put a stop to any further expansion.

Domaines Barons de Rothschild-Lafite took over the Los Vascos estate (Los Vascos meaning The Basques, in honour of its Basque origins) in 1988. At the time, the property extended to some 2,200 hectares, of which 220 hectares were planted with vines. The pioneering ambition of DBR in Chile was above all the result of extensive research into the potential of local wines. Many properties were visited and many wines were tasted before choosing Los Vascos, because of its location near the ocean and its exceptional soil. Along with ideal weather conditions, Los Vascos benefits from intense exposure to the sun, adequate water sources, semi-arid soils and little risk of frost. At an average of 130 m above sea level and at just 40 kilometres from the Pacific Ocean, the microclimate of Viña Los Vascos has everything to produce fine wines.

The new era has seen some very substantial investments under the supervision of Château Lafite Rothschild’s Technical Director. The existing vineyard has been restructured, a programme for new planting drawn up and yields have been intentionally reduced. Water resources have been secured with boreholes and a weather station has been set up in the vineyard. The bodega has been enlarged and modernized in several stages in order to meet the new requirements in terms of vinification and maturing (stainless steel vat room, pneumatic presses, barrel room). And finally, a guest house has been built in the traditional Chilean style, enabling the estate to offer visitors a warm welcome.

For the wines, a period of transition followed, the grapes from the young vines abounded with adolescent vigour and during the early 2000s this wild “force of nature” had to be tamed in the winemaking process. Gradually the young Cabernet Sauvignon vines settled down as they matured and techniques evolved as our understanding of the terroir increased. In parallel, a detailed analysis of the terroirs with older vines enabled their potential to be identified and the Grand Vins to be developed: the Grande Reserve and, from 1999, LE DIX. The range also expanded with a Sauvignon Blanc selected from wines produced in the Casablanca Valley, a Chardonnay and a Rosé, and then the Los Vascos Carmenere Grande Reserve.

The late 2000s marked a new stage for Los Vascos, with a new generation of technicians at the helm, and the arrival at maturity of the vines planted in the 90s The knowledge of the terroirs accumulated over 20 years has been used to refine the qualitative approach in the vineyard and in the winemaking. The decision to adopt large-scale drip irrigation and to grow more grape varieties have also brought new possibilities to the expression, balance and complexity of all the wines in the range.

The early intuition that Los Vascos possessed the potential to produce fine wines has been confirmed. Los Vascos can be more confident than ever about the strength of its terroirs. However, the pioneering spirit continues, and the pursuit of excellence requires passion and time. New high potential plots have been identified in the foothill regions: the technical team is already paving the way for the Grands Vins of tomorrow with new planting projects to meet demand.

 

A bit about Caro Winery:

Bodegas Caro | Taub Family Selections

The idea of forming a partnership between Domaines Barons de Rothschild (Lafite) and the Catena family was born in 1999. Initial enthusiasm quickly became a concrete plan to produce a single wine that would combine French and Argentine cultures and the two signature grapes of each producer, Malbec and Cabernet Sauvignon.

The Catena family has produced wine for four generations. Consequently, it was able to draw on its vast knowledge of the high altitude terroirs of the Mendoza region as well as its passion for Malbec to find the best vineyards. DBR (Lafite) contributed its centuries-old skills in growing, vinifying and ageing great Cabernet Sauvignon, as well as its know-how in blending different grape varieties to produce one wine that is greater than the sum of its parts.

Exchanges and selection work began in 1999 to produce CARO’s first vintage in 2000. The success of the early vintages resulted in the creation of another wine in 2003: AMANCAYA which, like its older brother, is based on a harmonious balance between Argentinian identity and Bordeaux style. Bodegas CARO then decided to celebrate the grape variety for which Argentina’s vineyards are famous by selecting a pure Malbec, ARUMA, starting with the 2010 vintage.

The Bodegas CARO winery, in the heart of Mendoza, has been producing the wines since the 2003 vintage and serves as the anchor of the CARO project. The renovation of the historic building and gardens in order to expand the winery and open the Bodega to the outside brings the final touch to the original project.

From the outset, one of the top priorities for Domaines Barons de Rothschild (Lafite) and the Catena family was to select the finest terroir that would enhance the alliance between Malbec and Cabernet Sauvignon.

 

The grapes selected for CARO come from Bodegas CARO’s vineyard and from the best vineyards we have selected as the most representative of the great terroirs of Mendoza and known for the high quality of their Malbec and Cabernet Sauvignon.

These terroirs are located :

– In the “First zone”, in  Luján de Cuyo and Maipú :
The region is known as the First Zone because it was the first place where Malbec was planted in Mendoza. The wines coming from this area are acknowledged to be among the best in the country. The altitude ranges from 800 to 950 metres and the average temperature range is 23ºC (max)/ 8ºC (min).

– In the Uco Valley, in Tunuyán, Tupungato and San Carlos:
This is an up-and-coming wine region, located one hour south of Mendoza. The landscape of this area is impressive, with glaciers and year-round snow overlooking the adjacent river and the vineyards.  The altitude range is here 1000 to 1600 metres and the average temperature range is 22ºC (max)/ 7ºC (min).

The management of the estate is ensured by Philippe Rolet, Estate Manager. Olivier Trégoat, ​Technical Director of Château Rieussec, Château L’Evangile, Château Paradis Casseuil  provides technical supervision.

Bodegas CARO lies the heart of the Mendoza region in cellars that were built between 1884 and 1895, which have been completely renovated.

Harvests are carried out by hand and the grapes are sorted on tables before de-stemming. Vinification is traditional with gentle pumping-over, followed by a period of maceration that varies in length depending on grape variety and vintage. Each vintage is aged in oak barrels, 18 months for CARO and 12 months for Amancaya. Most of the barrels are made at the DBR’s Cooperage in Bordeaux. Blending takes place during the months of September and October.

Malbec is a powerful, exuberant very fruity grape variety, that benefits from the structure and elegance given by the Cabernet. These two grape varieties go well together and gain complexity thanks to the rich high-altitude terroirs, offering great wines with good ageing potential.

Le Dix 2004 has a deep garnet, almost black colour. The powerful nose develops aromas of ripe black fruit and wild cherries complemented by wax, cedar, laurel and aniseed. The oak is pleasantly integrated with the fruit. This adds agreeable aromas of vanilla, grilled hazelnuts, tobacco and cinnamon. The concentration is impressive but the wine remains very well balanced and elegant, fresh and long, with powerful but well-coated tannins.

The summer had high but not extreme temperatures; autumn was relatively cold at harvest time, enabling us to maintain efficient management of the vineyard late into the season. This produced a fine phenolic maturity to balance the level of alcohol.

TASTING NOTES (AT BOTTLING)
Le Dix 2007 has a deep red garnet colour. The powerful nose develops aromas of very ripe black fruit and wild cherries with notes of cedar, laurel, and liquorice. The oak is pleasantly integrated thus complementing the enjoyable aromas of toasted coffee, vanilla, tobacco and cinnamon. The Syrah adds nuances of violets and raspberries. In the mouth, it is round, dense, fresh and fruity. Even though the wine is concentrated, Le Dix remains very balanced and elegant improving the freshness and length with rich but ripe, soft tannins. It finishes with a strong taste of cherry and a light bitterness of walnut skin typical of great Cabernets. The Carmenère adds enjoyable touches of pepper. Good ageing potential. A very fine vintage!

2009 Los Vascos Le Dix Colchagua Valley

The vintage was characterized by very favourable conditions of humidity and temperature, from flowering through to the harvest. Vineyard management focused on ensuring low yields and maintaining controlled irrigation to ensure an appropriate water supply for the vines.
In order to obtain consistency among the various plots used to produce Le Dix, multispectral aerial photographs were used in parallel with chemical analyses, monitoring of ripeness and tasting of the grapes. The final result clearly reveals the quality potential and the concentration of the grapes grown in these vineyards.

TASTING NOTES (AT BOTTLING)
Deep red colour with hints of purple. The nose presents intense red and black fruit aromas with a ripeness that keeps its freshness. Ageing in French oak barrels from Lafite’s cooperage gives the wine pleasant toasty, vanilla, and cinnamon notes that combine perfectly with the fruit aromas of blackcurrant, blueberry, cherry, and blackberry, and notes of caramel, liquorice, black chocolate and various peppers.

Powerful and complex in the mouth. Strong, full-bodied yet delicate and elegant tannins. An invitation to a moment of pure enjoyment, with a prolonged, consistent, well-rounded finish.

The winter came to an end in August with heavy rains (107 mm), which resulted in water accumulating in the soil that proved very useful in the months ahead, when rain was scarce. The 8 mm of rain that fell towards the end of the harvest in May did not affect the quality of the fruit.

The harvest started on April 25, 7 days later than in previous years, because the grapes took longer to reach full ripeness. The berries were smaller in size but showed excellent concentration and acidity, fresh fruit and ripe tannins that resulted in an absolutely remarkable mouthfeel.

TASTING NOTES (AT BOTTLING):
Deep ruby red color.  Expressive nose with fruity aromas of prunes, cherries, and ripe raspberries followed by notes of tobacco, leather, graphite. Ageing in French oak barrels sourced by DBR (Lafite)’s Cooperage gives the wine nice toasty notes that blend to perfection with rose and gooseberry notes and hints of hazelnuts and cinnamon. The broad range of particularly plump tannins from the different varieties in this blend help to create a unique mouthfeel of outstanding complexity.

Several frosts occurred during the spring. Although they did not involve extremely low temperatures, they did have a long duration, which resulted in a lower number of clusters per plant. The resulting lower yield – a characteristic well sought after in the case of premium wines– led to increased concentration of aromas and flavors. The summer was hot, with an average daytime high of 35.6ºC in January and February. Conversely, summer nights were cold, with an average low of 4.9ºC. This daytime/nighttime temperature differential proved very beneficial, because it allowed grapes to ripen to perfection.

TASTING NOTES
Deep ruby red color. Raspberry and ripe cherry-scented nose with hints of saffron, paprika, nutmeg, black pepper, chocolate, and tobacco.
A broad-shouldered wine of gorgeous personality, large volume, and elegant and balanced tannin.

In terms of weather, the year was characterized by a long growing season with an unusual 32 mm of rain in February. The late ripening led to very late harvesting of the Cabernet Sauvignon, which did not begin until 7 April, the latest in 50 years (150 days between flowering and harvesting as opposed to the usual 120 days).

TASTING NOTES (AT BOTTLING)
The vintage has a bright ruby colour, a powerful, fruity bouquet, and a creamy, full-bodied palate. It is long and spicy, with a tannic finish.

Very unusual rainfall at the end of March caused concern before the harvests. Fortunately, the damage was not significant and the harvests took place in normal weather in the Colchagua Valley. The previous summer months had been warm, after a rainy spring. The growing season benefited from very good conditions for the grapes.

TASTING NOTES (AT BOTTLING)
The wine is a deep, brilliant ruby colour with aromas of wild strawberries and hints of chocolate and mint. It is soft and velvety on the palate with powerful, well-structured, well-integrated tannins and red fruit notes.

It was a good weather year with moderate rain in the winter and an ideal spring. The vineyard developed in excellent conditions despite a generally very dry summer. TASTING NOTES (AT BOTTLING)
The colour is intense ruby, almost black, with some glints of amber. This ‘Grande Reserve’ has a rich bouquet of vanilla, tobacco, cinnamon, cedar and spices. Wood and fruit are seamlessly integrated. Later, the nose develops into ripe black fruit with blackberry and cherry and a hint of blackcurrant. In the mouth, it is rich, round and as voluptuous as a coffee éclair. The tannins are silky and elegant and the wine has impressive length with a pleasant peppery and liquorice finish. A rich harmony!

The 2008 harvest in Colchagua was unuusual. Scarce winter rainfall and a cold spring delayed flowering and then high summer temperatures resulted in lower yields, but more concentrated bunches with good balance and perfect acidity.

TASTING NOTES (AT BOTTLING)
Deep red ruby colour. The nose presents exuberant fruit, emphasised with a mixture of red fruit that give the wine its character. Notes of ripe cherries, plums, truffles, blackberries and liquorice are followed by a surge of black pepper, bay leaf, cloves and nutmeg. The oak blends in harmoniously adding to the wine’s complexity with aromas of vanilla, chocolate, coconut, graphite, tobacco, cinnamon and mocha.
The structure is interesting, with balanced acidity, good volume and a persistent, soft, elegant finish.

2012 Los Vascos Grande Reserve Limited Selection

Rainfall was relatively low (347 mm) in 2010, and so irrigation was necessary as soon as the winter ended, in August and September. This extra water enabled the vines to continue in a normal growth cycle.
Temperatures were cool during the flowering stage resulting in lower yields with less compact bunches. Growth was then healthy and regular, producing grapes of outstanding quality with remarkable concentration.
The harvests took place between 6 April and 13 May. The vines had reached their full potential with healthy grapes and excellent quality at the time of harvest.

TASTING NOTES (AT BOTTLING)
Bright ruby red colour. The nose opens with fresh fruit such as plums and cherries which blend with notes of vanilla, cinnamon, nutmeg, toasted hazelnut flour, white pepper, cloves and cashew nuts.
The palate is well-balanced with good structure and volume and a very pleasant lingering finish.

Unlike last season, which saw a record low of -4.9ºC, this year’s minimum winter temperatures, at around zero, were a sign of the warm spring to come, which brought an average high of 33ºC and an average low of 7.9ºC, with below normal rainfall (418 mm). High temperatures prevailed during the summer, obliging our teams to manage irrigation very carefully, to ensure that the vines would be subject to the right level of water stress to produce high-quality grapes.

TASTING NOTES
Lovely ruby red color with brick-like nuances. Aromas of fresh, ripe fruit such as raspberries, cherries, and plums can be discerned in the nose, along with notes of cocoa, peppermint, black olive, white pepper, and prune. On the palate, an appealing style is backed up by powerful tannins. An easy-to-drink, extremely pleasant wine.

We will take up to 15 people but will accept as few as 6 for a curated dinner by Chef Toni.  We must know in advance what food items you want so you will have to coordinate the menu with Toni ahead of time but she can put together any of your favorites from past Wine Bar menus or whatever you want if she has enough notice. The best thing about this table is the view of the wine, we have the largest selection of vintage wine in South Florida and everything is available at a retail price!!  You may want to bring a sweater it is 64 degrees in the wine cave. We only have Thursday night open this week as we are already booked on Friday and Saturday nights.
