I often get asked what my favorite wine is and this question can be hard to answer as I love a lot of different wines, but if I only had three to choose from at my last supper they would be Champagne, Barolo and Pomerol. 

 

And you know I love a wine when we have two back-to-back events featuring it like these two Champagne tastings coming up in a few weeks.  Toni and I drink champagne every night so it's not a challenge to host two back-to-back events.  My only question is can we do three? 

 

We have a special night planned on Friday, October 28th with one of the small family-owned Champagne houses and we have the latest generation of the Tribaut family in town to host this evening.  Valentin Tribaut is the 5th generation from this family-owned house they have 150 acres of vines and produce around 35,000 cases a year.  The Tribaut family owns vineyards in 14 different terroirs of Champagne and they are one of the greatest undiscovered old stories in Champagne.

This is a 5th generation family owned property and they have 150 acres of vines, they use oak for the aging, they buy 15% of the fruit from a cousin, producing 35,000 cases a year. Vineyards in 14 different terroirs, 3yrs 8 grams per liter, a honeyed character. A blend of 40% Pinot Noir, 30% Chardonnay, 30% Pinot Meunier. From 8 Terroirs Brut Origine is a fruity and middle-full body Champagne with a low dosage of 8grs of sugar per liter.

A powerful yet elegant floral bouquet, with toasted and buttery aromas. Beautiful complexity and structure on the palate, with distinct mineral notes, wild honey and toasty flavors, followed by a pleasant dry finish.

Made from a unique and creative blend, this vintage rosé Champagne exudes generous notes of red berries and strawberry. This well-balanced rosé Champagne is produced using the skin contact 'saignée' method. Its exceptional finesse and hemp twine muselet further enhance its unique personality.

Just 1,409 bottles of this champagne are produced each year. They are aged "sur lattes" (stacked horizontally) for 3 years before disgorgement. Dosage of 4 grams of sugar per litre.

A fruity and elegant Champagne, with a superb light salmon color. The palate is dominated by red fruit flavors such as blackcurrant and raspberry. Nice mature complexity on the palate.

A BIT ABOUT CHAMPAGNE TRIBAUT SCHLOESSER

 

Champagne Tribaut Schloesser was founded in 1929 in the heart of the Champagne region, in Romery, a few kilometers away from the capital of Champagne, Epernay. Tribaut-Schloesser was born from the union of Jean Tribaut with Suzanne Schloesser, both wine growing families.

For four generations, the Tribaut Family has maintained their passion and expertise to produce impressively delicate and refined Champagnes.  The vineyards are situated in the best locations between the Montagne de Reims and the Marne Valley, very close to Epernay.

Champagne Tribaut's vineyards are made up of 30% Chardonnay, 40% Pinot Noir and 30% Pinot Meunier.

At the winery, two presses of a capacity of 8,000 kg each provide not only a better quality of juice but a reduced waiting-time for the grape on the platform before pressing.

In the winery and cellars, tradition and technological progress are married to ensure the highest quality Champagnes.

Aging of the still wines in oak casks is an important signature of Champagne Tribaut-Schloesser. With a capacity of nearly 50 hectoliters, the first casks that were bought on the banks of the Seine at Bercy date back more than a century. They are reworked every three years to release fresh wood tones. The combination of oak-aged wines and fresh, stainless-steel wines provide a delicate balance that defines the house style.

The house maintains state of the art fermentation, riddling, disgorgement and bottling equipment at the domaine, and the combination of tradition and technology ensure top quality, complexity, and consistency of style.  All Tribaut-Schloesser Champagnes are held for a minimum of 36-39 months on the lees before disgorgement, adding to the complexity of the house style. Higher cuvées spend from 48 months to 7 years on the lees before disgorgement.

 

Scientific proof that Champagne is good for your brain

New research shows that drinking one to three glasses of champagne a week may counteract the memory loss associated with ageing, and could help delay the onset of degenerative brain disorders, such as dementia.

 

Scientists at the University of Reading have shown that the phenolic compounds found in champagne can improve spatial memory, which is responsible for recording information about one's environment, and storing the information for future navigation.

 

The compounds work by modulating signals in the hippocampus and cortex, which control memory and learning. The compounds were found to favourably alter a number of proteins linked to the effective storage of memories in the brain.  Many of these are known to be depleted with age, making memory storage less efficient, and leading to poorer memory in old age and conditions such as dementia.  Champagne slows these loses and therefore may help prevent the cognitive losses that occur during typical and atypical brain ageing.

 

Champagne has relatively high levels of phenolics compared to white wine, deriving predominantly from the two red grapes, Pinot Noir and Pinot Meunier, which are used in its production along with the white grape Chardonnay.  It is these phenolic compounds which are believed to be responsible for the beneficial effects of champagne on the brain.

 

Professor Jeremy Spencer, Department of Food and Nutritional Sciences, University of Reading, said: "These exciting results illustrate for the first time that the moderate consumption of champagne has the potential to influence cognitive functioning, such as memory.  Such observations have previously been reported with red wine, through the actions of flavonoids contained within it.

 

"However, our research shows that champagne, which lacks flavonoids, is also capable of influencing brain function through the actions of smaller phenolic compounds, previously thought to lack biological activity. We encourage a responsible approach to alcohol consumption, and our results suggest that a very low intake of one to two glasses a week can be effective."

 

Dr. David Vauzour, the researcher on the study, added: "in the near future we will be looking to translate these findings into humans.  This has been achieved successfully with other polyphenol-rich foods, such as blueberry and cocoa, and we predict similar outcomes for moderate Champagne intake on cognition in humans." 

 

Previous research from the University of Reading revealed that two glasses of champagne a day may be good for your heart and circulation and could reduce the risks of suffering from cardiovascular disease and stroke.

 

The paper is published in Antioxidants and Redox Signalling.
