Unless you are talking of white Burgundy which is becoming hard to find as the last two vintages were troublesome and the world-wide demand for these wines is skyrocketing.
The best value in white Burgundy has always been Chablis but the price on the top producers wines are even going crazy in Chablis today. And with a few short vintages on the horizon the prices are going nowhere but up!
Whenever we have our good friends from Maison and Domaines Henriot in town we are happy to host them for an event at the Wine Bar, so when I heard that the winemaker for William Fevre, Didier Seguier was in town on Wednesday, March 8th I immediately put the date on our calendar of events and I set aside a few older bottles that we had here in the store to sample this evening.

A touch of honey green apple with sea shell briny character, nice richness and complexity on the nose. A nice richness a higher limestone concentration and there is a bit of Portlandian soils a steeper grade. A zesty green apple and lime citrus leaves the tongue salivating for food. 2020 WILLIAM FEVRE CHABLIS MONTMAINS 1ER CRU

This wine has that classic sea shell like minerality and lime citrus and green apple white flowers. A nice richness on the palate with tongue tingly minerality and a long zesty finish, that chalky sea shell mineral notes lasting through the finish. Finish 40+ Excellent
2018 WILLIAM FEVRE CHABLIS VALMUR GRAND CRU CRU

With its terroir split into two parts on either side of the Sainte Vaubourg fountain path, it has slightly deeper clay-limestone soils than the other Grands Crus. Its shape is reminiscent of a small valley hence the name \"Valmur\".Elegant bouquet with fruity notes against a mineral backdrop. Powerful with great structure, the wine is smooth and delicate on the palate.
2016 DOMAINE WILLIAM FEVRE LES PREUSES CHABLIS GRAND CRU MAGNUM

(96 points) The 2016 les Preuses from Domaine Fèvre is another brilliant young wine. The bouquet shows all of the mineral complexity of this great terroir, wafting from the glass in a refined mix of grapefruit, pear, white flowers, lime zest, a hint of beeswax and a glorious bath of limestone minerality. On the palate the wine is deep, full-bodied, long and very solid at the core, with stunning backend mineral drive, lovely focus and grip and a very long, very pure and dancing finish. 2015 WILLIAM FEVRE CHABLIS VAULORENT 1ER CRU
(92 Points) The 2015 Chablis 1Er Cru Vaulorent showed so well when I tasted it from barrel. Now in bottle, it has a well-defined bouquet with hints of white flower developing in the glass. The palate is well balanced with a fine line of acidity. A very pretty Chablis with hints of orange sorbet and dried apricot leading to a precise and classy finish. 2013 WILLIAM FEVRE CHABLIS MONTMAINS 1ER CRU
Premier Cru Montmain's unique terroir of very stony terrain produces a wine with very pronounced mineral aromas, extraordinary power and excellent ageing potential. This wine shows great structure with good length. Both accessible and very fresh, it shows fantastic concentration.

2011 DOMAINE WILLIAM FEVRE CHABLIS BOUGROS GRAND CRU

An expressive bouquet of candied lemon and lime citrus fruit with hints of white flowers and a briny mineral quality that needs a few hours to really express itself the bouquet on this wine is even better on the second day. Bright and zesty on the tongue with a smooth creamy texture but has a firm hand of acidity making the tongue tingly and pop with acidity, wonderful length and a finish that goes on and on. This wine will age another decade or more in the cellar easily but will be hard to resist once you have tasted it. Finish 50+ Most Excellent

A bit about Domaine William Fevre
Coming from a family that has been in the Chablis region for more than 250 years, William Fèvre’s father was already a great wine-maker after World War II. His son William founded the Domaine de la Maladière and announced his first harvest in 1959.
For many years, William Fèvre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot keenly and skillfully so as to make wine whose personality reflects the authenticity of the soils from which they spring.
In 1998, the venerable Henriot family from Champagne succeeded him. To continue these focused efforts, the Domaine was taken up with the constant desire to make indisputably genuine and fine wines, and above all with bringing along a very personal expertise in Chardonnay. All the efforts have but one goal – to finely express the most subtle variations in the greatest Chablis crus.
This attachment to the value of the terroir has also allowed the William Fèvre Domaine to establish an exceptional estate by acquiring some of the best Chablis vineyards.
With its 47 hectares Domaine, of which more than half are in Chablis Premier Cru (12 hectares) and Grand Cru (15.2 hectares), William Fèvre owns the widest array of Grands Crus and benefits from ideal conditions to produce excellent Chablis.
Located on “historical” terroirs, dating from before the extension of the vineyard areas that occurred in the 1970’s, the William Fèvre Domaine is at the very heart of the vineyards, on soil that mixes marl and clay-rich lime, as well as a Kimmeridgian subsoil rich in minerals and oyster fossils that give Chablis its unique mineral character.
The Chablis terroirs constitute an ideal environment for the cultivation of Chardonnay but this special soil is not enough to elaborate exceptional wines. One needs all the know-how and experience that comes from men to help a terroir live up to its full potential, and to produce grapes and wines worthy of their appellations and faithful to their origins.
At William Fèvre, everything is done, to reach this goal. Grapes are hand-picked and put in small crates, the bunches are rigorously sorted out, pressings are short, the must carefully settled, and a fine balance is established, according to the vintage, for the vinification between vat and cask. Since the 1998 vintage, the proportion of new casks was reduced so as to not dampen the subtle variations of Chablis terroir. These methods and precautions allow us to obtain rich wines of a very high aromatic purity that hold on their typicity, whose principle characteristics are minerality and freshness.
