Ok- we like the white wines of Burgundy also… but my favorite wine is Champagne.  And we can’t go to long without a special offering on this magical elixir and this e-mail introduces a new brand of bubbles from one of our favorite Champagne houses Henriot.  We had their cellarmaster Alice Tétienne here last October and the magnum of Blanc De Blancs Suvee 38 was my favorite Champagne that night but bigger is better when it comes to Champagne and this perpetual Solera Champagne concept is somewhat unique and the box is truly amazing also did I mention that it is only bottled in Magnum?


We are also happy to include on this offering their other wines from France the Burgundy of Bouchard Pere et Fils and the Chablis of William Fevre.

We will take up to 16 people but will accept as few as 6 for a curated dinner by Chef Toni.  We must know in advance what food items you want so you will have to coordinate the menu with Toni ahead of time but she can put together any of your favorites from past Wine Bar menus or whatever you want if she has enough notice. The best thing about this table is the view of the wine, we have the largest selection of vintage wine in South Florida and everything is available at a retail price!!  You may want to bring a sweater it is 64 degrees in the wine cave.


This new addition to the Champagne Henriot line-up is the first for their latest cellarmaster.  Alice was formerly at the house of Krug and those of you that have been following my propaganda know that Krug is my favorite Champagne house but with Alice at the helm here that may change as the Champagne at Henriot is a lot more affordable!  This is the latest thing from our good friends at Champagne Henriot.

Created by the 8th generation of the Henriot family, represented by Gilles de Larouzière Henriot, L'inattendue (The Unexpected) is an illustration of one of the principles of savoir-faire carried out by the House since its foundation: the cultivation of diversity of the Champagne terroirs. This cuvée reveals a terroir through a singular year and a unique grape variety.

This cuvée cannot leave one indifferent. The aromatic profile is precise, fine, chiselled. It’s a real statement. Minerality and citrus fruit dominate. Indeed, it is chalky, ethereal and the fresh lemon expresses itself, accompanied by mentholated notes.

In the mouth, it is a perfect coherence. This one is straight, tracing. Intensity and precision guide the taste perception.

The Champagne region is comprised of a great diversity of terroir, through different vines exposures, slopes, soils tones, operators in the vineyard, or even growing practices. When Apolline Henriot founded Maison Henriot in 1808, she wanted to tell the beauty of this vineyard and thus of the diversity that characterizes it. Apolline Henriot cultivated this richness of profiles offered by the nature, allowing her to respond to her desire to craft Champagnes expressing complexity and generosity.

The year 2016 was defined by a complex weather patterns with mixed nuances. After a calm and serene start to the year, the spring brought heavy rainfall. This abundance of rain persisted until the beginning of the summer, which then brought extreme drought. The harvest, which started on September 18th for Maison Henriot, was spread out with a certain heterogeneity of maturation.

On the winegrowing hillside of the Côte des Blancs, different chalk facies are visible, from the bottom of the hillside to a high limit. This chalk is covered, on the upper part, by hard clay and limestone from the Tertiary (65 to 25 million years ago). The Grand Cru of Avize is an integral part of the Côte des Blancs.

It is revealed here through Henriot L’inattendue 2016 which perfectly reflects this geological profile. Historically, Chardonnay has been planted on this terroir, offering a perfect balance between soil, vine and climate.

CELLAR MASTER ALICE TÉTIENNE

Born and raised in the Champagne region, Alice Tétienne has spent the majority of her life in the vines, relishing putting her hands in the soil and deeply curious about the diversity of terroir that exists all around her. A believer that excellence comes when vineyards can truly express themselves, Tétienne and the house of Champagne Henriot share a passion for the pursuit of the purest expression of Chardonnay from selected grapes in the finest terroirs of the Côte des Blancs and Montagne de Reims. In her role as Cellar Master, Tétienne dedicates her time to the vineyards where she focuses on protecting the soil and vines, maintaining the finest terroir, and preserving Champagne Henriot’s signature style of acidity and freshness. Tétienne was awarded the “Best Winemaker of the Year” in 2020 by Trophées Champenois for her dedicated work.

Tétienne came to Champagne Henriot from Maison Krug, where she was responsible for vineyard relations and was a member of the Tasting Committee. Before Maison Krug, Tétienne joined Centre Vinicole Nicolas Feuillatte in 2014 as an oenologist, supporting winegrowers on grape pressing and winemaking. A highly specialized winemaker, she holds a Bachelor’s in Vine Sciences, and a Master’s in Vine and Terroir from Institut Universitaire de la Vigne et du Vin Dijon, as well as a National Diploma of Oenology from Les Unités de Formation et de Recherche (UFR) Reims, a Master Wines and Champagne qualification from University de Reims Champagne Ardenne, and considerable experience working in various wine regions throughout France.

Through her experience, Tétienne has acquired knowledge of all the critical steps to craft Champagne wines, with a particular focus sustainability.  Tétienne is in charge of both the vineyards that Champagne Henriot owns and works with the network of growers that the house has worked with for generations.


Tétienne and Champagne Henriot’s connection is more than a shared love of the vineyards: Her grandmother previously owned a vineyard neighboring one of the first vineyards owned by founder Apolline Henriot in the Montagne de Reims. Tétienne lives in that area today and can see both of the vineyards from her home.

A bit about Champagne Henriot:

The Champagne house of Henriot can trace its history back 370+ years to when their direct descendants migrated to the region.  Native to Lorraine, the family relocated to Champagne around 1640.  In Reims, the Henriots engaged in textile and wine brokerage.  Little by little, the family acquired vineyards and by 1791 they had acquired the Hôtel des Douanes and the Fermes Royales (built in 1760 by the architect Legendre in honour of King Louis XV).    

In 1794 Nicolas Henriot married Apolline Godinot.  Together, they developed a fascination for the culture of the vine and production of wines of quality.

It was in 1808, under Apolline Henriot, that Champagne Henriot was officially founded. She was the niece of the very famous Abbé Godinot, an erudite man who contributed to improvements in viticulture and the making of the Champagne wine.  Apolline, an enterprising woman of great character, sold her wines both in France and abroad.

The champagne wines became a huge success with royalty and it was only natural that Champagne Henriot became the favorite firstly at the Dutch court, then in Austria and Hungary with the Hapsburgs.

Since 1808, Champagne Henriot, one of the last independent and family-owned houses in Champagne, has pursued a tradition of excellence – a fragile balance between delicacy, intensity, and purity. For seven generations, the family has selected only the very best vineyards, concentrated on the purity of chardonnay and has upheld the utmost respect for time in order to ensure the cuvee has an opportunity to reach its full expression.

The Champagne business is very incestuous and in 1851 Ernest Henriot, grandson of Apolline Henriot, persuaded by his sister, Amélie Henriot, became associated with his brother in law, Charles Camille Heidsieck and created the brand Charles Heidsieck.  Ernest continued to manage his own business in his own name.  

The Henriot family has retained direct cultivation of roughly 35 hectares (87 acres). Their parcels are scattered among the Vallée de la Marne (Mareuil and Ay, a Grand Cru); la Montagne de Reims (Avenay, a Premier Cru); and the Côte des Blancs (Epernay, notably le Clos l’Abbé, and Chouilly, a Premier Cru). These vineyards supply fifteen to twenty percent of its needs. To supply the rest, the house depends primarily on growers who share its standards of quality. This approach provides a very large palette of crus for its blends, one of the keys to its expertise.

The vineyards it uses are situated throughout the appellation. The house is fortunate to have access to Grands and Premiers Crus, particularly in the Côte des Blancs, stronghold of the chardonnay variety which dominates in its blends: Avize, Oger, Cramant, Vertus and others. Pinot noir is selected principally from crus on the northern slope of the Montagne de Reims, such as Verzy, Verzenay and Val d’Or.

A Brief History of Bouchard Pere Et Fils:



Founded in 1731, Bouchard Père & Fils now owns the most fabulous collection of famous vineyards, situated in the heart of the Côte d’Or, where the great wines of Burgundy are born.  Bouchard Pere et Fils owns 130 hectares in cotes d'or making them the largest landowner of classified vineyards with 12 different Grand Cru and 74 different Premier Cru vines with legendary names : Corton-Charlemagne, Clos Vougeot, Montrachet, Beaune Grèves Vigne de l’Enfant Jésus, Volnay Caillerets, Meursault Perrières, Nuits-Saint-Georges les Cailles, to name only a few.  The company trades from the old Château de Beaune, a fortress built in the 15th Century whose bastions with walls as thick as seven meters shield, in the best possible atmosphere, an unequalled collection of exceptional bottles.  Many of these are over a hundred years old and originated before phylloxera invaded the French vineyards.

The cellars here were built under the reign of Louis the 11th during the 14th and 15th century.  They were built by one of the dukes of burgundy to store arms so they are unique as this was not intended to house wine bottles.  Louis the 16th gave this fortress to the town of Beaune and they were bought by the Bouchard Pere et Fils firm in 1820.  After the French revolution all property of the church was confiscated and sold at auction and it was at this time that Bouchard bought up a lot of vineyards for a very reasonable price.  Today if you were to put a price tag on the vineyards owned here it would be in the hundreds of millions of dollars.  The have the largest cellar in burgundy with 50,000 bottles of old vintages going back to 1846 Meursault Charmes.  They recork the bottles every 20-40 year, they are sleeping under 10 meters of earth and some of the walls of the cellar are 5-7 meters thick so the conditions are completely perfect and natural.  They are consistently 13-15 degrees Celsius and the humidity is 80-90 percent. 



You can see the old arms bins that now hold wine bottles here in the first picture.  The second picture shows where the three fake walls were placed during the German occupation of this region during WW2.  They have four fake walls constructed to conceal some of the oldest bottles from the Germans.  The third shot is a wall demonstrating just how thick the construction is.

In 1995, the Bouchard family passed the torch on to a very old Champagne family, the Henriots, who have carried on the strategy established by the Bouchards over nine generations. The Domaine expanded in the Côte de Nuits by acquiring parcels in two Grands Crus: "Bonnes Mares" and "Clos Vougeot". Then in 1996 they acquired further vineyards in Gevrey-Chambertin Premier Cru "Les Cazetiers".

Finally, in 2005, the Maison inaugurated its new "Saint-Vincent" winery and barrel cellar. The technical team took advantage of 275 years of savoir faire and several years of observation world-wide to carry out this work, so as to maximize the quality of its wines.  With this new winemaking facility, Bouchard Père & Fils is equipped to meet the challenge of the quest for excellence, without concession, in the production of the Grands Vins de Bourgogne.

Luc Bouchard hosted our group for the tasting at the winery and suggested a local restaurant, La Table de Guigone.  This place was very unassuming from the street but the food was divine like the combination of Foie Gras and Sweet breads in a salad format which was spectacular.  The leg of lamb was one of the best that I have ever had and the Beaune du Chateau wines that went with our meal were also incredible as this is one of the best value areas in Burgundy for both red and white. 



If you want to go there while in Burgundy we recommend making reservations as many restaurants in Burgundy are only open 4-5 nights a week- Bouchard Pere et Fils however is one of the easiest wineries to visit as they are open to the public nearly every day of the week and have cellar tours everyday as well in addition to over a dozen wines available for tasting at no charge!! I may have let the cat out of the bag, if you are in Beaune there is no excuse for not stopping by this famous producer and taste through their wines, they are one of the easiest places to tour and see in Burgundy and the wines are excellent.

Situated between Volnay and Mersault, the village of Monthélie is not as well known as its famous cousins. Nevertheless, the first traces of vineyards here date back to the 9th century. The "Climat" "Les Duresses" spreads over the villages of Auxey-Duresses where it is the prize vineyard, and the village of Monthélie, where it is one of the most remarkable Premiers Crus. The 1.72 hectares of the Bouchard Père et Fils estate, often harvested a little later than the other vineyards of Monthélie, produce rich wines.

A very concentrated vintage that needed a bit of time to start to come around and this wine has only started to open with lemon drop candy and green apple fruit, white flowers and a chalky mineral, sea shell notes, gaining in intensity and complexity as this wine opens.  A rich and creamy wine on the tongue with a good amount of rich ripe tree fruit, tongue tingly minerality.  This wine needs to be decanted for at least two hours and if you can keep some till the second day.  Finish 50+  Most Excellent

Coming from a family that has been in the Chablis region for more than 250 years, William Fèvre’s father was already a great wine-maker after World War II. His son William founded the Domaine de la Maladière and announced his first harvest in 1959.

For many years, William Fèvre (who to this day enjoys a very good reputation as a defender of historically renowned terroirs), has worked each plot keenly and skillfully so as to make wine whose personality reflects the authenticity of the soils from which they spring.

In 1998, the venerable Henriot family from Champagne succeeded him. To continue these focused efforts, the Domaine was taken up with the constant desire to make indisputably genuine and fine wines, and above all with bringing along a very personal expertise in Chardonnay. All the efforts have but one goal – to finely express the most subtle variations in the greatest Chablis crus.

This attachment to the value of the terroir has also allowed the William Fèvre Domaine to establish an exceptional estate by acquiring some of the best Chablis vineyards.


With its 47 hectares Domaine, of which more than half are in Chablis Premier Cru (12 hectares) and Grand Cru (15.2 hectares), William Fèvre owns the widest array of Grands Crus and benefits from ideal conditions to produce excellent Chablis.

Located on “historical” terroirs, dating from before the extension of the vineyard areas that occurred in the 1970’s, the William Fèvre Domaine is at the very heart of the vineyards, on soil that mixes marl and clay-rich lime, as well as a Kimmeridgian subsoil rich in minerals and oyster fossils that give Chablis its unique mineral character.

The Chablis terroirs constitute an ideal environment for the cultivation of Chardonnay but this special soil is not enough to elaborate exceptional wines. One needs all the know-how and experience that comes from men to help a terroir live up to its full potential, and to produce grapes and wines worthy of their appellations and faithful to their origins.

At William Fèvre, everything is done, to reach this goal. Grapes are hand-picked and put in small crates, the bunches are rigorously sorted out, pressings are short, the must carefully settled, and a fine balance is established, according to the vintage, for the vinification between vat and cask. Since the 1998 vintage, the proportion of new casks was reduced so as to not dampen the subtle variations of Chablis terroir. These methods and precautions allow us to obtain rich wines of a very high aromatic purity that hold on their typicity, whose principle characteristics are minerality and freshness.

An expressive bouquet of candied lemon and lime citrus fruit with hints of white flowers and a briny mineral quality that needs a few hours to really express itself the bouquet on this wine is even better on the second day.  Bright and zesty on the tongue with a smooth creamy texture but has a firm hand of acidity making the tongue tingly and pop with acidity, wonderful length and a finish that goes on and on.  This wine will age another decade or more in the cellar easily but will be hard to resist once you have tasted it.  Finish 50+  Most Excellent
